The perfect snack when you're working is the humble little rusk! The perfect combination of oats, bran and raisins in cake form! Perfect for those autumn days!
A rusk is a hard, dry biscuit or a twice-baked cake of sorts. It's better than a biscuit, probably slightly healthier as well, and filling too! Back in university, I had them for supper! Rusks and tea! Perfect comfort food!
Here is a quick and simple recipe ( it's my mom recipe or Ina Paarman- famous cook!)
1kg self-raising flour
10ml Baking powder
500ml brown sugar
750ml rolled oats
3 cups All bran flakes
2 cups Sunflower seeds
2 eggs
2 cups Buttermilk
500g butter, melted
250g raisins or cranberries (optional)
Mix the dry ingredients together. Beat the eggs and buttermilk together. Melt the butter.
Mix all the ingredients to form a dough. Spoon into a large deep baking tin. Bake at 180 Degrees for 1 hour. Cut into rusks, dry out the rusks in a cool oven for 4 hours or overnight in the warming tray.
